Instant Pot Beef Short Ribs

Ingredients
- (3 lbs.) Beef Short Ribs
- (2 tbsp) Olive oil
- (1 cup) Bone broth or beef bone broth
- (2 tbsp) Apple cider vinegar
- (1 tbsp) Brown sugar
- (1 tsp) Garlic powder
- (1 tsp) Onion powder
- (1 tsp) Paprika
- (to taste) Salt & pepper
- (optional) Rosemary or chopped green onion to garnish
Directions
- Season the short ribs with salt, pepper, garlic powder, onion powder, and paprika.
- Set the Instant Pot to the "Sauté" function and add the olive oil. Once hot, add the short ribs and brown on all sides, about 2-3 minutes per side. You may need to do this in batches depending on the size of your Instant Pot.
- Once all the ribs are browned, add the broth, apple cider vinegar, and brown sugar to the Instant Pot. Stir to combine.
- Close the lid and set the valve to the "Sealing" position. Cook on high pressure for 35-40 minutes, depending on the thickness of your short ribs.
- When the cooking time is complete, allow the pressure to release naturally for 10 minutes, then do a quick release for any remaining pressure.
- Carefully open the lid and remove the short ribs from the Instant Pot. Skim any excess fat and broth from the pot and store.
- Serve immediately, garnished with rosemary or chopped green onions if desired.
