Instant Pot Chuck Roast

Ingredients

  • (3 lbs) Beef Chuck Roast
  • (1 tbsp) Extra Virgin Olive Oil
  • (1 whole) Medium-sized onion, quartered
  • (3 whole) Garlic cloves, minced
  • (1.5 cups) Beef broth or beef bone broth
  • (2 tbsp) Worcestershire sauce
  • (1 lb) Carrots, chopped
  • (1.5 lbs) Potatoes, cubed
  • (2 sprigs) Fresh rosemary
  • (2 sprigs) Fresh thyme
  • (To taste) Salt and pepper

Directions

  1. Set Instant Pot to “Sauté” and add olive oil.
  2. Season the roast with salt and pepper, then sear on all sides. Remove and set aside.
  3. Add onion and garlic, sauté for 2 minutes.
  4. Pour in beef broth and Worcestershire sauce, scraping to deglaze.
  5. Add the roast back, with carrots, potatoes, rosemary, and thyme.
  6. Seal lid and set to “Pressure Cook” (High) for 60 minutes.
  7. Let pressure naturally release for 15 minutes, then quick-release.
  8. Remove roast and vegetables, slice the roast, and serve with broth as gravy.
