Instant Pot Chuck Roast

Ingredients
- (3 lbs) Beef Chuck Roast
- (1 tbsp) Extra Virgin Olive Oil
- (1 whole) Medium-sized onion, quartered
- (3 whole) Garlic cloves, minced
- (1.5 cups) Beef broth or beef bone broth
- (2 tbsp) Worcestershire sauce
- (1 lb) Carrots, chopped
- (1.5 lbs) Potatoes, cubed
- (2 sprigs) Fresh rosemary
- (2 sprigs) Fresh thyme
- (To taste) Salt and pepper
Directions
- Set Instant Pot to “Sauté” and add olive oil.
- Season the roast with salt and pepper, then sear on all sides. Remove and set aside.
- Add onion and garlic, sauté for 2 minutes.
- Pour in beef broth and Worcestershire sauce, scraping to deglaze.
- Add the roast back, with carrots, potatoes, rosemary, and thyme.
- Seal lid and set to “Pressure Cook” (High) for 60 minutes.
- Let pressure naturally release for 15 minutes, then quick-release.
- Remove roast and vegetables, slice the roast, and serve with broth as gravy.
