Instant Pot Pork Loin Roast

Ingredients
- (2-3 lbs.) Pork Loin Roast
- (1 tbsp) Olive oil
- (1 tsp) Sea salt
- (1/2 tsp) Ground black pepper
- (1 cup) Bone broth or beef bone broth
Directions
- Allow the pork roast to come to room temperature by letting it sit on the counter for 20-30 minutes. Season it well with the salt and pepper.
- Set the Instant Pot to "Sauté" mode and add the olive oil. Brown the pork loin on all sides.
- Add the beef broth to the Instant Pot and scrape any browned bits from the bottom to prevent burning.
- Place the pork roast back into the Instant Pot, close the lid, and set the valve to "Sealing" position. Cook on high pressure for 27 minutes, followed by a 15-minute natural release.
- Carefully remove the pork roast and let it rest for a few minutes before slicing and serving.
