Instant Pot Pork Loin Roast

  • (2-3 lbs.) Pork Loin Roast
  • (1 tbsp) Olive oil
  • (1 tsp) Sea salt
  • (1/2 tsp) Ground black pepper
  • (1 cup) Bone broth or beef bone broth


  1. Allow the pork roast to come to room temperature by letting it sit on the counter for 20-30 minutes. Season it well with the salt and pepper.
  2. Set the Instant Pot to "Sauté" mode and add the olive oil. Brown the pork loin on all sides.
  3. Add the beef broth to the Instant Pot and scrape any browned bits from the bottom to prevent burning.
  4. Place the pork roast back into the Instant Pot, close the lid, and set the valve to "Sealing" position. Cook on high pressure for 27 minutes, followed by a 15-minute natural release.
  5. Carefully remove the pork roast and let it rest for a few minutes before slicing and serving.
