Instant Pot Beef Stew
Hearty, delicious beef stew made with our Beef Stew Meat!

Ingredients

  • (1.5 lbs.) Beef Stew Meat
  • (1 tbsp) Extra Virgin Olive Oil
  • (1 whole) Medium-sized onion, diced
  • (3 whole) Garlic cloves, diced
  • (4 cups) Beef broth or beef bone broth
  • (1.5 cups) Carrots, chopped
  • (4 whole) Medium-sized potatoes, peeled and cubed
  • (1 cup) Mushrooms, sliced (optional)
  • (3 tbsp) Tomato paste
  • (1 tsp) Worcestershire sauce
  • (1 tsp) Dried thyme
  • (1 tsp) Dried rosemary
  • (to taste) Salt and pepper
  • (2 tbsp each) Cornstarch and water (for thickening)

Directions

  1. Set Instant Pot to “Sauté” and add olive oil.
  2. Brown the beef in batches, then set aside.
  3. Add onions and garlic to the pot and sauté for 2 minutes.
  4. Add beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Scrape the bottom to deglaze.
  5. Add browned beef, carrots, potatoes, and mushrooms.
  6. Seal the lid and set to “Pressure Cook” (High) for 35 minutes.
  7. Allow a 10-minute natural release, then quick-release remaining pressure.
  8. Set to “Sauté” and stir in cornstarch slurry until thickened.
  9. Serve hot, garnished with fresh parsley if desired.
