Instant Pot Beef Stew

Ingredients
- (1.5 lbs.) Beef Stew Meat
- (1 tbsp) Extra Virgin Olive Oil
- (1 whole) Medium-sized onion, diced
- (3 whole) Garlic cloves, diced
- (4 cups) Beef broth or beef bone broth
- (1.5 cups) Carrots, chopped
- (4 whole) Medium-sized potatoes, peeled and cubed
- (1 cup) Mushrooms, sliced (optional)
- (3 tbsp) Tomato paste
- (1 tsp) Worcestershire sauce
- (1 tsp) Dried thyme
- (1 tsp) Dried rosemary
- (to taste) Salt and pepper
- (2 tbsp each) Cornstarch and water (for thickening)
Directions
- Set Instant Pot to “Sauté” and add olive oil.
- Brown the beef in batches, then set aside.
- Add onions and garlic to the pot and sauté for 2 minutes.
- Add beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Scrape the bottom to deglaze.
- Add browned beef, carrots, potatoes, and mushrooms.
- Seal the lid and set to “Pressure Cook” (High) for 35 minutes.
- Allow a 10-minute natural release, then quick-release remaining pressure.
- Set to “Sauté” and stir in cornstarch slurry until thickened.
- Serve hot, garnished with fresh parsley if desired.
